薩爾瓦多El Salvador的地勢屬於高地地形，是在中美洲裡面積最小的國家。因為境內有兩座平行的高山 ，火山土壤裡有著豐富的礦物質，這種特別的地理環境使得薩爾瓦多具備適合栽種咖啡的條件。咖啡生豆依照種植海拔分級：SHG (Strictly High Grown) ：表示此分類的咖啡生長在較高的海拔(超過1200公尺)，此海拔生長的咖啡會產生較慢的成熟水果和較濃密的咖啡豆。

薩爾瓦多-Cuzcachapa 合作社Cooperativa Cuzcachapa，最初由56位咖啡生產者一起於1966年10月31日成立。初始時基於免費會員、自願加入及平等權利和義務合作等原則，企圖尋求每個加入者和咖啡生產者的生活和經濟能夠有所改善，進一步提高咖啡生產的品質。目前合作社擁有自己的咖啡後製處理場及加工工廠，並從2005年開始和卓越杯COE比賽單位合作，提供無法自行後製的比賽莊園服務，目前協助這些莊園多次獲取高分。
